Become An Approved Internship Site

We are always happy to welcome new mentors committed to the standards of excellence and hospitality of The Restaurant School at Walnut Hill College. Becoming a mentor and an Approved Internship Site involves an application process and site visit to ensure that all of our sites are up to the standards of The Restaurant School at Walnut Hill College.

Accepting an intern into your business is a serious responsibility that should be carefully considered before taking that step. Mentoring an intern is a special relationship of teacher and student that is very important to the long-term success of that student.  All interns, regardless of how much experience they bring to your worksite, require the supervision of an appropriately trained manager or chef. Interns have special needs:  flexible schedules, mandatory hour requirements, the added stress of classes, and occasionally other jobs.

We welcome the opportunities you bring to The Restaurant School at Walnut Hill College and we want you to understand that an intern is not 'just another employee'.  Interns have made a commitment to learn and work in the hospitality industry; they have made a commitment to The Restaurant School at Walnut Hill College to complete their education, and they have made a commitment to themselves to select good mentors to help them to achieve to their highest potential.

The requirements are identified below:

Pastry Arts

  •   80% or more of preparation must be from scratch

  •   A Pastry Chef on the premises with the following credentials:

    • 5 years of experience as a Pastry Chef

    •   Culinary school graduate, or

    •   Certified by the American Culinary Federation

  • (OR) Ten Years of experience as a Pastry Chef without a degree, or certification from the A.C.F.  

  • The baking of a variety of items

Culinary Arts

  •   80% or more of preparation must be from scratch

  •   An Executive Chef on the premises with the following credentials:

    •   5 years of experience as an Executive Chef

    •   Culinary school graduate, or

    •   Certified by the American Culinary Federation

  • (OR) Ten Years of experience as an Executive Chef without a degree, or certification from the A.C.F.  

  • The menu offers a variety of items (meats, fish, poultry, etc.)

  •   Variety of cooking methods used (broiling, sautéing, baking, poaching, etc.)

Restaurant Management

  •   The facility is a full service restaurant or catering business. Hotels, private clubs, institutional or freestanding operations are acceptable.

  •   The Intern position will prepare the student for a managerial position.

  •   Front or back of the house positions are acceptable depending upon the student's career goals and prior experience.

  •   Students wishing to work back of the house must be working with an Executive Chef who meets the requirements noted under Culinary Arts.

  • Supervisor with a minimum of either five years of experience or formal training.

Hotel Management

  •   Same criteria mentioned above under Restaurant Management. Additional sites that will be considered are meeting planning companies, hospitality related public relations firms, convention bureaus or convention center training.

  •   Consideration will be given to other sites and/or positions related to hotel operations. Each situation will be evaluated on an individual basis with consideration given to the student's career goals and prior experience.

  • Supervisor with a minimum of either five years of experience or formal training.
